Fifth Season Tangra Chinese is a fine-dining restaurant that satisfies any Indian-Chinese craving one may have, right in the heartlands of Singapore. Birthed in West Bengal, it is a multicultural cuisine that blends Tibetan and Chinese recipes. Such a blend truly espouses the multiculturalism that Singapore is all about – which is why I decided to bring it to Singapore more than a decade ago.
Blending the cuisines of the Tibetan and Chinese migrants in Bengal, led to food that explodes with a hot, sour, and spicy taste. Tangra Chinese dishes are something that every Indian is familiar with – namely dishes like momos (which is similar to the Chinese dumplings known as ‘gyoza’), hakka chowmein, thukpa, and chili chicken. The momos served at Fifth Season also won the BEST DISH OF THE YEAR award in 2009, and serve as a fond remembrance for any Indian living abroad, as well as an interesting savory item for any newbie.
It’s only fitting that such a cuisine be brought to Singapore, as just like the multiracial identity, Fifth Season is a true blend of China and Tibet. That is why I felt that Singaporeans’ taste buds would best resonate with its food. Fifth Season is an up-and-coming concept, about how the taste bud can revel in a fifth season, rather than the conventional four that one is used to. And this season of love is celebrated throughout the year with the restaurant’s constantly improving and newly added dishes.
The green chillies in Kolkata’s chilli chicken might have got replaced by dry red chilli in Delhi’s chilli chicken, but the Indian Chinese food fever did not spare any Indian from great grandson to great grandfather. You may find Indians not knowing about many regionally popular Indian dishes but you cannot find an Indian not knowing about Hakka Chowmein, Chilli Chicken and Gobi Manchurian.
